No-Bake Cookies (Peanut Butter Delights)

Peanut Butter Delights: By Janet Inscoe (my grandmother)
2 c. sugar
1/4 c. cocoa
1/2 c. milk
4 Tbsp. butter

Mix all these ingred. and bring to a boil. Boil 45 seconds. Make sure to get all ingredients measured out first. After removing this from the stove, add in:

1/2 c. peanut butter
1 tsp. vanilla
dash salt
2 1/2 c. instant oatmeal
Spoon quickly on wax paper. Let cool and enjoy!

You can make these quickly, and its a great snack when your family, neighbors or kids friends pop in unannounced. I make these for bake sales for my kids as members of the JR Volunteer Fire Dept. members. It's always a hit and makes good profit for the department!

My sweet Baby Girl!

I wanted to say thank you for everyone's concern and prayers for our family. It was a difficult day for sure, but not only for my family, but so many others. Baby Girl was such a great dog/friend to so many. She came into our lives about 8 months ago. She was a rescue, and she rescued us! She and Tippy went with us for Christmas break, and everyone that met her, wanted to keep her. I had to deal with my own grief, but also tell others that loved her so much. They tried to be strong for us, but they hurt too! She loved when friends would visit, she would surely get a head rub!!

She was already a part of the family. I told them all that it would be such a sad day if and when anything ever happened to either of my girls. Most people including myself, aren't to sure about a pitbull. She was the first I'd ever dealt with. She was the most loyal dog, protector, friend, chasing critters out of our yard, friendliest, social, snuggling, sweet dog! To some, I'm sure it's just a dog...to my family, we lost one of our girls. I told everyone, we had 2 boys & 2 girls! She is in her final resting spot, beside patches. Some of you knew Chucks dog....Patches. Again, thank you all for everything. We will be ok, but it's not going to be easy to ever find another sweet heart like her to fit our family.

I am one of the most protective moms anyone could ever meet. I would never put my family in danger, of any kind. Baby Girl was found in a community months ago along with another dog. Some of you will remember that. I offered to bring home a pitbull for the night, and carry her to the animal shelter the next morning. Another lady/friend of mine keep the other dog, and 7 puppies that were only about 2 days old. Mary could not handle all of the puppies, mother and her own two rottweilers and baby girl, so thats why I offered to do that for her.

When I got home, noone here could believe I would ever bring a dangerous breed like that here. It was over with, she was immediately part of the family, but I still wasn't trusting of her. Chuck, my husband told me, if you bring them here, their home. As we spent our last night with her, laying in my lap for 3 1/2 hrs. getting her head rubbed and eating 3 slices of cheeses toast, she was a happy girl. I asked Chuck, ain't you glad "I" decided to keep her? He said, yep, I'm glad YOU decided that. We both laughed, and we agreed she was the sweetest dog we'd ever owned. Please don't think that a pit bullis not for you. She was estimated to be 3 yrs old by the vet, and we had no problems. She warned us when someone was here, I knew my kids were safe when I wasn't here.

We will be ok soon, and will adopt another dog/family member. I know she was a happy, grateful girl to have found us, but we were just as lucky. We all loved her so much. I told the boys after school yesterday, and they helped plant the rose bush. Again, thanks for everything, God bless you all!

Sick Kids is the Worst!

      My youngest, Trenton who is 13 yrs old come home sick Friday from school. We have been pumping him full of meds and trying to maintain his fever. He was born 8 1/2 weeks early and was a preemie. He was put on oxygen and stayed in the NICU overnight. His stats starting climbing the next day and was able to go to the nursery. Two days after his birth via c-section, we came home. Two days later we were back at the hospital and he had pneumonia. We were there for a week. In the next 3 yrs. he had pneumonia 21 times.
         Finally soon after his 3rd birthday, they took out his tonsils and adenoids. This tremendously helped. He had asthma for yrs. and we always were administering him his nebulizer. So after the yrs. he has become much stronger and able to handle most colds, but this one reminds me so much of his younger days. We have been using his breathing treatments, and alternating Tylenol and ibuprofen every 2 hrs. to keep his fever down. The absolute most pitiful thing in the world to to have a sick baby, even if they are 13. No school for him tomorrow, just some one on one Moma time. Hopefully Tuesday he will be able to go back to school, he has a baseball game.

Every day lifa at my house!

          As a mother, you never know what the day will bring. Our schedules change with the direction of the wind. Today's schedule for me was to get the kids off to school, then get to town. I needed to get my oil changed, tires rotated, inspected, and renew my tags. I also had to get an under-armor shirt for my son to wear for the baseball game today. Pick him up a BLT sub from subway and have all of this done and get back up the mountain before 12. I had a pretty good schedule planned! Keyword: PLANNED!!
          I get to school with my sons sub and find out the game has been cancelled! And by this time, his 30 min. lunch break is about 4 minutes from ending. I'd already decided to surprise him and my older son by taking him out of school early to go watch his brother play his first game. Again, this was a surprise to them both. It's a 2 hr. drive from here for the away game. They cancelled the game due to snow and ice.  So, I decided to just bring him home for lunch and some rest.  Then, my oldest sees me and asked if he could come home too! So we are here this afternoon, resting.
         I now have to go back to town, 30 miles one way, to get groceries and medicine for the boys. Which I could of done while I was there, but it's gonna be a great afternoon spent with my boys!

Baseball Season

Spring is my favorite season for sure, with all of the buds popping through the ground, birds singing and eating out of the bird feeders. It's just a miracle to see how things grow and come back to life after such harsh winters.  I live in the mountains of NC and the weather here is different from what I'm use to. During the winter (cold) months, I usually won't go outside unless it's to gather another arm full of firewood for our stove.

Baseball is another reason I love this time of year as well. My youngest son, Trenton, started playing on a rec team last yr. He was in 6th grade and had never been on a team before. He asked me this year if he could play again.....I thought he would because he loved it so much. So of course, he is on a team this year, but it's the school team.

Trenton, listened to the coach's last year and took their direction to heart. After just a few games last year, they tried Trenton on first base. He is a lefty, so they wanted to try him in that position.  He was there from that point forward!! As a Mom, I enjoyed watching the sport, being a team Mom was great as well. Our entire family got so use to games twice a week and practice. We would even have private practices and most of the kids would show up to practice as well.

There first game is tomorrow. It's an away game, and the boys will be leaving school around 12:30. We got uniforms yesterday and he is lucky # 7!! He is so excited, and so am I. I wish them the best of luck tomorrow, and hope they have a great time! It won't be long before I'm sitting in my collapsible chair, sipping on a diet pepsi, and cheering on our team.
